The Cattitude Teapot: When Taste and Convenience Matter

By

A Short History of Tea

If you enjoy a good cup of tea, you're not alone. Tea is the most consumed drink worldwide, second only to water. Although no one knows when man first began drinking tea, one legend places it around 5,000 years ago during the Chinese Emeperor Shen Nung's dynasty. Supposedly, at that time, people boiled water to prevent disease, and one day, leaves from a nearby tree fell in the water. Initially, tea was prepared from the dried leaves of evergreen trees. Whether this is true or not, the cultivation of tea began in Szechuan, China around 350 A.D. It eventually became so important to the Chinese economy, it was even used as money.

The Benefits of Tea

By drinking just 2 to 4 cups of tea per day, you can reap many benefits. Most teas have polyphenols. The benefits of polyphenols include:

  • Preventing cellular oxidation
  • Preventing blood clotting
  • Lowering cholesterol
  • Preventing cancer
  • Stimulating the immune system

In addition to polyphenols, tea also contains an amino acid called theanine. Theanine can:

  • Fignt cancer-causing agents
  • Delay aging
  • Fight high blood pressure
  • Fight bacterial and viral infections
  • Improve digestive functions

Loose Leaf Tea vs. Tea Bags

Many tea lovers think loose leaf tea is superior to tea bags. If you're interested in the health benefits of teas, it is true. Lose leaf tea has more antioxidants than tea bags.

Teas are graded dependent upon tea leaf size. Whereas loose leaf tea usually uses whole tea leaves. tea bags are filled with fannings. For instance, black tea has four grades of quality: whole leafs with none or little alterations, broken leaves, smaller broken leaves, and fannings. Fannings are the poorest quality tea. They are what is left at the bottom of the barrel after the better rated teas have been sifted out. Fannings usually consist of tiny, broken leaves and tea dust. Unlike loose leaf teas, fannings and tea dust, fannings are usually darker, lack sweetness, and have a stronger flavor. When tea leaves are broken, the tea becomes stale and, the essential oils can dry out. Consequently, the tea loses its flavor.

In addition to the size of the tea leaf, space is also a consideration. For a superior cup of tea, the water needs to circulate around the tea leaves for the leaves to unfurl and release their eseentail oils. This doesn't happen with tea bags.

How to Brew Loose Leaf Tea

Brewing loose leaf tea is not really that much more difficult than brewing tea bags.

  • Never fill the infuser more than 1/3 to 1/2 of the way full since tea leaves can more than double when steeped.
  • Start with cold water. For a better taste, it is preferable to use either natural spring water or filtered water. However, do not use distilled water. It can make your tea taste flat.
  • Use approximately one teaspoon of tea for every eight ounces of water. Since tea can more than double during steeping, make sure you use a big enough infuser.
  • Boil your water. For white and green tea, lNever pour boiling water over the tea leaves. Let the water cool for a half minute before pouring it over the infuser and steep for 2 to 3 minutes. For black or oolong varieties of tea, use the boiling water right away and steep for 4 to 5 minutes.

After you use the infuser or teapot, don't wash it with soapy water. The soap leaves a residue on the infuser which affects the flavor of the tea.
